Apple Cinnamon Muffins

Ok, I admit it.

We’re a little muffin-crazy here at SPF.

Why?

Because after the initial work of making the muffins, there’s a lot of muffins, and they are easy to take anywhere.  They’re delightful breakfast nuggets of protein and energy.

That is, if you make them yourself with healthy ingredients.  We all know that store-bought muffins are worse than doughnuts.  So give these bad-boys a try!

Apple Cinnamon Muffins

Ingredients:

2 cups flour

1/2 cup oats

1/2 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon ground clove

1 Granny Smith apple, diced

1 cup apple sauce

2 eggs

1/2 cup plain yogurt

1/2 cup sugar

1/4 cup honey

2 teaspoons vanilla

1.  Preheat the oven to 350 degrees.  Mix all the dry ingredients (except the sugar) together in a medium sized bowl.

2.  Dice the green apple, and add it to the dry ingredients.  Mix well.

3.  Mix all the wet ingredients (plus the sugar) together in a medium sized bowl.  Be careful not to over mix.

4.  Add the wet ingredients to the dry, and mix carefully.

5.  Add the batter to well greased muffin tins.  Bake for 20 – 25 minutes, or until the muffins are done (a toothpick will be clean when removed).

6.  Enjoy for breakfast or a snack.
