Avocado Black Bean Salad

If you happened to over-do-it yesterday, we’ve got a light and tasty recipe to help get your nutrition back on track. It’s got veggies, it’s got healthy fats, it’s got lean protein, and a tasty and tart dressing to wake up your taste buds! There is something amazing about the combination of black beans, corn, cilantro, olive oil, and lemon juice. It’s a flavor combination that packs a punch! This Avocado Black Bean Salad is great as a weekday lunch, or an accompaniment for a weekday dinner side! Give it a try!
Avocado Black Bean Salad
Ingredients:
3 Roma tomatoes
1 English cucumber
1 can corn, 15.5 oz
1 can black beans, 15.5 oz
3 avocados, no too ripe
2 limes
1/4 bunch cilantro
1 teaspoon onion powder
1 teaspoon garlic salt
2 tablespoons olive oil
1. Drain the corn and black beans, rinse, and add to a medium sized bowl.
2. Chop all vegetables into bite-sized pieces and add to the bowl. Remove the seeds from the Roma tomatoes with a spoon, to get rid of any extra liquid.
3. Score and cube the avocados and add to the bowl.
4. Add the cilantro (chopped), spices, lime juice, and olive oil to the bowl.
5. Mix well, but take care not to break up the avocados.
