Baked Salmon

Crystal loves salmon.  I, on the other hand, have mixed feelings about it.  I think that it can be a little fishy sometimes, and I don’t care for that.  As I get a little older, however, I can’t help but be impressed by the health benefits of salmon.  So, I made it my mission to find a way to prepare salmon that I would like.  I bought a fresh fillet of Atlantic salmon and thought I would try baking it.  It actually turned out really good, and I realized the reason that I didn’t like salmon.  I had been buying frozen farmed salmon, and I just don’t care for frozen farmed salmon.  Now that I’ve figured out what to buy, I actually really enjoy salmon.  In fact, this recipe is a weekly staple at our house.  I strongly recommend that you buy fresh salmon fillets for this recipe.  I’m not sure how well it will work with frozen, but you could give it a try and let us know.

Baked Salmon

Ingredients:

1 lb salmon fillet

3 tablespoons soy sauce

1 tablespoon lemon juice

1 tablespoon extra virgin olive oil

1/2 teaspoon garlic powder

1/2 teaspoon freshly ground pepper

1.  Cut salmon into portions.  Add salmon, soy sauce, and lemon juice in a zip lock bag.  Marinate for one hour.

2.  Preheat oven to 425 degrees.

3.  Line a baking sheet with parchment paper.

4.  Remove salmon from marinade and place salmon skin-side down on the parchment paper.

5.  Evenly divide the olive oil on the salmon and gently rub.

6.  Evenly divide the garlic powder and black pepper and add to the salmon.

7.  Add to the oven and bake for 15 – 20 minutes, or until salmon is done.  Serve hot, and eat around the skin if you wish.
