California Breakfast Sandwich
I promise this recipe is not a tribute to SNL’s “The Californians,” but since I brought it up…
This sandwich is a great way to start your day! It’s got brain-boosting avocado, refreshing tomato, savory turkey, creamy egg and cheese, all wrapped up in a chewy English muffin. You can make these one at a time, make a batch for the week and store them in the fridge, or even freeze them!

- 5 English Muffins
- 5 Slices Pepper Jack Cheese
- 9 – 10 oz Deli Turkey
- 5 Eggs
- 1 Tomato
- 1 Avocado
Instructions
- Cook the eggs, one at a time, in a pan on the stove with a ring mold on medium high heat until the yolk is to your desired done-ness. (If you don’t have one, you can microwave them in a small bowl for 30 seconds. Be careful, because eggs can explode in the microwave.)
- Let the eggs cool.
- Top an with 1 – 2 oz of turkey, an egg, cheese, and microwave for about 15 seconds, or until the cheese is melted. If refrigerated, microwave for about 30 seconds. If frozen microwave for about 1 minute to 1 minute and 30 seconds.
- Add 1 tomato slice and about 3 – 4 avocado slices.
- Enjoy!
