Candied Walnut and Warm Brie Salad
I have another confession to make. I totally geek out about salads with fruit and candied nuts. The only explanation for this strange behavior that I can offer is that the salads are SO GOOD! And by that, I mean TASTY, DELICIOUS, and NUTRITIOUS! Who WOULDN’T geek out about that? Ok, maybe it IS just me. I may never know. It’s entirely possible that there’s an underground fruit and candied nut salad cult movement. It might be named something like “Salad Nuts Unite!” I digress.
Well, this is a fruit and candied nut salad with cheese! I don’t just geek out about these, I nerd out…
Candied Walnut and Warm Brie Salad
Ingredients:
5 cups of lettuce (your favorite kind)
1 cup walnuts
2 tablespoons maple syrup
1/2 wheel of brie
1 cup cranberries
381 calories, 30.6g fat, 12.1g carbohydrates, 18.1g protein
1. Chop the lettuce and set aside.
2. Add the whole walnuts and maple syrup to a small pan. Cook on medium to medium high heat, stirring constantly, until the maple syrup seems to disappear, or cook down.
3. If you wish, you may want to cut the wax off the wheel of brie. Carefully shave the wax off the edges of the brie. Cut the brie into 15 small triangles: cut the wheel in half, then into 5 equal parts. Cut those equal parts into three wedges.
4. Add 1 cup of salad to a plate. Place 3 brie triangles in the middle of the place. You may warm the brie up before adding them to the salad, but it’s not necessary.
5. Add 1/5 of the cranberries to the salad.
6. Add 1/5 of the walnuts to the salad.
