Caramelized Onion and Goat Cheese Paninis
So…this isn’t the healthiest recipe we’ve ever shared with you, but it’s soooooo good. It’s nice to indulge once and a while. The grilled, crispy sour dough bread provides a wonderful crunch and balance to the creamy cheese. Goat cheese is so tart and creamy. The provolone adds a mozzerella like string to the sandwich, without adding a lot of flavor, so the goat cheese is really allowed to shine. And last but not least, the caramelized onions add an intense, sweet flavor that mingles so well with goat cheese.

Caramelized Onion and Goat Cheese Paninis
Ingredients:
4 slices sour dough bread
8 slices provolone cheese
1/2 cup goat cheese
1/2 cup caramelized onions
1. Preheat the panini press or pan to medium heat.
2. Lay 2 slices of provolone on each piece of bread. Evenly distribute the goat cheese and caramelized onions. Close the sandwich.
3. Place the sandwich in the panini press (or grill) and press (or grill) until the cheese is melted.
4. Slice on the bias and enjoy!
