Chicken Salad with Pistachios
This is one of those recipes that works well when you have a busy week. This chicken salad with pistachios is a simple and versatile recipe that can be thrown together in minutes, yet last the whole week. One of the best things about it is the longer it sits, the better it gets, because the flavors merry and create one big awesome flavor! It’s great on it’s own, in a wrap, or on a slice of bread. Chicken Salad with Pistachios
Ingredients:
2 chicken breasts, cooked and cubed
1/2 cup finely diced onions
3 large celery stalks, finely diced
1/2 cup roughly chopped pistachios
1 cup grapes, halved or quartered
1/4 cup plain Greek yogurt
1/4 cup mayonnaise
3 tablespoons Dijon mustard
1/2 teaspoon garlic powder
1/4 teaspoon fresh ground black pepper
1. Add the chicken, onions, celery, and pistachios to a medium large bowl.
2. Add the Greek yogurt, mayonnaise, mustard, garlic powder, and black pepper to the bowl. Mix well.
3. Add the grapes, and fold them in.
4. Enjoy by itself, or in a wrap.
