Chicken Spinach Wraps
When you’re trying to watch your calories, it’s important to have some low calorie lunches in your recipe repertoire. This recipe is low cal and it’s packed with some nutrient-rich vegetables to give you some vitamins, and over-all good-for-you-stuff. The best part is that it’s really easy to make, so you can throw it together on the fly, or prep a whole week’s worth of lunches, if you’re into that kind of thing. 😉
The crunchy carrots, radishes, and spinach pair well with the soft tortilla and tangy cream cheese. The chives give this wrap an extra layer of flavor. I think we can all agree that peppery chicken is just plain good.
Chicken Spinach Wraps
Ingredients:
5 tortilla wraps (We used a local vendor: Trevino’s Tortillas. Their tortillas are homemade and come in a ton of flavors. We used their Garden Veggie, and it was awesome for this recipe.)
5 tablespoons cream cheese
1 bunch of chives (1 tablespoon)
10-15 baby carrots, sliced
4 – 5 radishes
2 cooked chicken breasts, seasoned with salt and pepper, sliced into thin strips
4 – 5 cups fresh spinach
Instructions
- Spread about 1 tablespoon cream cheese evenly on a tortilla and sprinkle it with chives.
2. Arrange the carrots and radishes evenly on the tortilla.
3. Add a couple slices of chicken breast.
4. Top with spinach and roll into a wrap.
5. Cut in half and enjoy!
