Dark Chocolate, Ginger, and Pepita Bark

I am so excited to share this recipe!  It’s chocolaty, it’s spicy, it’s crunchy, and its a little salty.  The sweet and spicy ginger does a great job of balancing the bitterness of the dark chocolate, and the the pepitas add a nice textural crunch.  You can find pepitas and crystallized ginger in the bulk section at your local or health food grocery store.  This recipe is a great way to curb your sweet tooth after diner and get some antioxidants without a lot of the extra empty calories.

This recipe is so easy to make.  If you can melt chocolate in the microwave, you can make it!

Dark Chocolate, Ginger, and Pepita Bark

Ingredients:

1 bag semi-sweet chocolate chips

1/4 cup chopped crystallized ginger

1/8 cup pepitas

1.  Chop the crystallized ginger and set aside.

2.  Melt dark chocolate in the microwave (in a microwave safe bowl) 30 seconds at a time, stirring, until the chocolate is melted.

3.  Line a baking sheet with parchment paper.

4.  Spread the chocolate out on the parchment paper and smooth with a spatula.

5.  Evenly spread the ginger and pepitas out on the chocolate.

6.  Place in the fridge and chill until the chocolate has hardened.

7.  Carefully break the chocolate apart to create the bark.

8.  Store in the fridge for best results.
