Green Chili, Sausage, and Egg Breakfast Wrap
Ingredients:
10 eggs
1 lb turkey sausage
1 can green chilies
5 tortilla wraps (I used 100 calorie wraps)
1. Spray a large pan with non-stick cooking spray or olive oil. Brown the sausage on medium high heat, with salt and pepper to taste.
2. Remove sausage from the pan an put on a plate lined with a paper towel to soak up some of the grease. Set aside.
3. Pour off any remaining sausage grease. Place the pan back on the heat and spray with non-stick spray or olive oil.
4. Crack the eggs into a bowl to watch for shells. Add the eggs to the pan and scramble by breaking the yolk and stirring. Add salt and pepper to the eggs. Fold and stir until the eggs are done, about 5-8 minutes. The eggs will be done once they are set and are not runny.
5. Add the sausage back to the pan. Add the can of green chilies and stir to incorporate well.
6. Remove from heat and let cool until enough to handle.
7. Place a tortilla on a plate (or sheet of saran wrap). Fill with the egg and sausage mixture with the desired amount of filling. You may want to use toothpicks to secure the wrap and keep it from falling apart.
