Greek Salad
The Holidays are over, and it’s time to start cutting back on the calories! Oh the horror!
We hope everyone had a wonderful Holiday season! Now it’s on to New Year’s resolutions! This here is a tasty high protein recipe that will help you start your new year off in the right direction. It’s huge on flavor, protein, healthy fats, and low in the calorie department. In addition to all the tasty benefits, it’s super easy to prepare a whole week’s worth of lunches!
Greek Salad
Ingredients:
2 Chicken Breasts
2 tablespoons Greek Seasoning
2 heads of Romain lettuce
1 can artichoke hearts (13.75oz)
1/2 cup kalamata olives
4 oz feta cheese
1. Season the chicken with Greek seasoning, salt, and pepper, and cook until done, about 10 minutes. The thermometer should read 160 degrees for a chicken breast.
2. Let the chicken cool, and slice into long strips.
3. Chop the lettuce and add a cup to a bowl. Add about 1/5 to the lettuce.
4. Quarter the artichoke hearts if needed. Add about 1/5 to the salad.
5. Slice the kalamata olives in half. Add about 1/5 to the salad.
6. Top with 1/5 of the container of feta cheese.
7. Dress with your favorite balsamic vinegar and enjoy!
