Green Tea Ice Cream

The first time I had ever heard of “Green Tea Ice Cream” was when I was in college, not SO long ago.  I thought it was a really strange concept.  Because Green Tea is…not sweet at all!  At least not on my watch.

A local, and trendy, ice cream place was selling the flavor.  Well, I’m not a picky eater, and I’ll usually try something once, unless its chocolate covered bugs or something of that sort.  So, as you may well have guessed, I tried it, and it was actually really good!  Imagine that.  Something that people are buying actually tastes good.

So, here’s our version of this unique and healthy ice cream treat.

You will need an ice cream maker for this recipe.  We love Cuisinart’s ice cream maker.  It’s Amazon’s Choice with 4.6 out of 5 star rating and 6,201 reviews.

Green Tea Ice Cream

Ingredients:

3 cups half and half

1 cup heavy cream

1 1/4 cups sugar

8 egg yolks

1 teaspoon vanilla extract

1/8 to 1/4 cup matcha green tea powder, depending on how strong you want it

Directions:

1.  Add one cup half and half and 1/8 to 1/4 cup green tea powder to a medium sized pot.  Whisk until combined over medium heat.

2.  Once combined, add the remaining half and half and the heavy cream and bring to a simmer.

3.  Whisk the egg yolks until they lighten slightly in color.  Then slowly whisk in the sugar.

4.  Once the liquid has come to a simmer, slowly add about 1/4 cup of the hot dairy mixture to the egg mixture while whisking constantly, careful not to scramble the eggs.  This is called Tempering the egg mixture. Keep adding the mixture 1/4 cup, continually whisking, at a time until half the mixture has been added to the egg yolks.  Then add the egg and dairy mixture to the dairy mixture, while whisking.

5.  Return the mixture to the stove and cook over medium heat until the mixture reaches 170 degrees.  If you don’t know a thermometer, you will know that it’s done when it coats the back of a spoon without running off.

6.  Put the liquid into a container and chill for one hour.  Then whisk in the vanilla flavoring.

7.  Put the ice cream base in the fridge overnight.

8.  Churn the ice cream according to your ice cream maker’s directions.
