Grilled Buffalo Chicken Sandwich
As many of you know, I have an affinity for sandwiches. They are one of my favorite foods, as seen here, and here. If you are a consistent reader, you also know that I have an affinity for buffalo wings. Remember? It only seems logical to combine them in to one tasty meal. Now, you could always just put our buffalo wings between two slices of bread, but our legal team cautions us against saying that. So don’t do that. Instead, combine these tasty ingredients to make a sandwich that can be thrown together in a matter of minutes and are sure to please.
Grilled Buffalo Chicken Sandwiches
Ingredients:
1 Chicken breast, butterflied
1/2 onion, sliced
1 tomato
2 slices of lettuce
1/2 cup Franks RedHot Sauce
2 tablespoons butter
1 tablespoon Cajun seasoning
Salt and pepper to taste
1 tablespoon Blue Cheese Dressing
2 Hamburger buns
1. Preheat the oven to 350. Slice the chicken breast in half.
2. Season the chicken with Cajun seasoning, salt, and pepper on both sides. Heat a pan to medium high, and grill the chicken for about 2-3 minutes on each side, or until it has a nice outer crust.
3. Place the chicken on a cookie sheet lined with foil. Cook in the oven for about 15-20 minutes, or until done. (Thermometer should read 160 for chicken.) Once the chicken is done, let it sit for about 5-10 minutes outside of the oven.
4. While the chicken is cooking, slice the onions thinly. Spray a medium sized pan with nonstick spray, and add them to the pan on medium heat. Cook the onions for about 10-15 minutes, or until well-caramelized, stirring often to ensure the onions don’t burn. This will also help them cook evenly.
5. Slice the tomatoes.
6. Optional: toast your bun.
7. Melt 2 tablespoons of butter in a small bowl in the microwave. Add 1/2 cup Franks RedHot to the butter and whisk until well incorporated.
8. Place the chicken in the bowl of hot sauce and coat well on both sides.
9. Spread 1/2 tablespoon of blue cheese on the bottom bun. Place the chicken on the bottom bun. Follow with the caramelized onion, then tomato, and lettuce.
10. Add the condiments of your choice to the top bun, and then add the top bun to your sandwich.
