Jasmine Rice with Sauteed Carrots and Onions

One night I had planned a simple meal for us.  I don’t recall what the main item was, but I know that we were supposed to have a simple side salad with it.  I remember cutting in to the head of lettuce only to find the inside was, to say the least, not appetizing.  So now I don’t have a side to go with it.  So off the the pantry I went.  I spied a forgotten bag of jasmine rice.  We had bought it for something specific, and had a fair bit left.  So I decided I would make a side dish with the rice, but I didn’t want it to be just plain old rice.   So, like many recipes, this was born out of desperation, and has become a weekly favorite in our house.  It’s simple, tasty, ridiculously easy, and not too bad for you.  You could use plain white rice if it’s all you have around, but it really won’t be the same.

Jasmine Rice with Sauteed Carrots and Onions

Ingredients:

1/3 cup chopped onion

1/4 cup diced carrot

1 tablespoon butter

1 clove garlic

1 teaspoon salt

1 cup jasmine rice

1 1/3 cups warm water

1.  Heat a small pot over medium-high heat.  Add the butter and allow to melt.  Add carrots, onions, garlic, and salt and lightly saute until the vegetables are slightly softened, about 5 minutes.

2.  Add the water to the pot and turn the heat up to high.  Bring the liquid to a boil.

3.  Once the water is boiling, add the rice and stir.

4.  Allow water and rice to return to boil.  Reduce heat to low and cover.

5.  Allow rice to cook, stirring occasionally, for 19 minutes.

6.  Fluff with a fork, and serve hot!
