Lazy Man’s Stir Fry
I love easy meals, and this is a meal that we’ve got down to a science! After about 5 years of tweaking the recipe, it’s perfect! Jeff can even cook it in about 20 minutes or less! This is a step-by-step meal to the “T”. Chicken is step one, vegetables are step two, and sauce is step 3. So literally, this is as easy as 1-2-3! And yes, I am using the word literally correctly. Apparently that’s hard to do these days. Yay me.
No need for a wok for this meal, so that’s awesome. The recipe lives up to the title, because it cuts a bunch of corners, I’m sure. However, the end result is a healthy AND tasty dish that you can prepare in minutes!!!
Lazy Man’s Stir Fry
Ingredients:
1 pound boneless, skinless chicken breast
1 pound frozen stir fry vegetables
1 tablespoon vegetable oil
2 teaspoons toasted sesame oil
1/2 teaspoon garlic salt
1/4 teaspoon white pepper
1/4 cup stir fry sauce (You can use a store bought one, or use the recipe I make)
For the Sauce:
3 tablespoons soy sauce
1 tablespoon Sweet chili sauce
1 tablespoon brown sugar
1/4 teaspoon white pepper
1 tablespoon cornstarch
1. For the sauce combine all of the sauce ingredients in a small container and shake to combine. Set aside.
2. Heat a large saute pan over medium high heat. Thinly slice the chicken.
3. Add the vegetable and sesame oils to the pan. Add the chicken, garlic salt, and white pepper. Stir the chicken until it is cooked, about 7 minutes.
4. Add the bag of frozen vegetables, stir, and cook until the vegetables are heated.
5. Shake the stir-fry sauce, add to the pan, and stir. Cook for about a minute to allow the sauce to thicken.
