Mandarin Orange Chicken Salad
Don’t you just love Mandarin Oranges? They are like little nuggets of gold, waiting to be found in your favorite Asian salad.
We don’t about you, but after the heavy foods of the holidays, we look for lighter recipes. This salad has crisp greens, crunchy green peppers, lean protein, and a light and tasty dressing. And best of all? It’s filled with little golden salad nuggets.
Mandarin Orange Chicken Salad
Ingredients:
2 heads of romaine lettuce
2 chicken breasts
1 8 oz can of mandarin oranges in light syrup
1 green pepper
1/3 cup olive oil
3 tablespoons rice wine vinegar
2 tablespoons toasted sesame seed oil
1/4 cup light syrup reserved from the mandarin oranges
1/4 teaspoon white pepper
1/2 teaspoon salt
1 teaspoon mustard
1. Season the chicken breasts with salt and pepper and cook on medium high heat until the internal temperature reaches 160 degrees. Set aside to rest.
2. Wash the romaine heads. Chop the romaine lettuce into bite sized pieces.
3. Open the can of mandarin oranges and reserve 1/4 of the liquid. Drain the rest of the liquid and set the oranges aside.
4. Add the olive oil, rice wine vinegar, sesame oil, light syrup, white pepper, salt, and mustard to a jar. Add the lid and shake.
5. Wash the green pepper and slice into long thin strips.
6. Slice the chicken into long thin strips.
7. Add 1/5 of the lettuce to a bowl or plate. Top with 1/5 of the chicken, 1/5 of the mandarin oranges, and 1/5 of the green pepper. Top with dressing and enjoy!
