Mini Pecan Pies

This is going to sound very sacrilegious, but here goes: I’m not really a pumpkin pie girl. There, I’ve said it. I do have a slice every year on Thanksgiving, but it’s not my favorite pie. Now if you want to talk about pumpkin cheesecake, we have something there.
My grandmother makes a mean pecan pie, but there was a time when we didn’t spend every Thanksgiving with that side of my family. Pecan pie is very rich and sweet, and also hard to get through the whole slice. However, I still manage.
Did you have any doubt? I thought I would try something a little different this year. These mini pecan pies are just as good, and little healthier for you. Enjoy!
We love Wilton’s mini muffin tin.
Preheat oven to 350. Spray a 24 muffin tin with non-stick spray and set aside.
Crust:
6 graham crackers sheets
2 tablespoons melted butter
Filling:
1/2 cup pecans
24 pecan halves
2 eggs
2 tablespoons melted butter
1/4 teaspoon salt
1/4 cup light corn Syrup
2 tablespoons brown sugar
1. Melt 2 tablespoons of butter and set aside to cool. Place the graham crackers into a food processor or a small food grinder. We love our Cuisinart 4-cup work bowl for this small job. Chop until the graham crackers become crumbs. Add to a small bowl and add melted butter. Mix until well incorporated.
2. Press the graham cracker mixture into the bottom and up the sides of the mini muffin tins and set aside.
3. Melt 2 more tablespoons of butter and set aside to cool. Add 2 eggs to a medium size bowl and beat. Add brown sugar, salt, corn syrup, cooled melted butter, and mix well. (Note: If the butter is too hot when you add it to the egg mixture, it will cook the eggs.)
4. Add the half-cup chopped pecans and mix.
5. Add the pecan mixture to the muffin tin.
6. Place a pecan half on top of each mini pie.
7. Bake for 10-15 minutes or until done.
8. Let cool before removing from muffin tins.
Serving size: 1 mini pie
