What do a 350 degree oven, Fillo dough, a granny smith apple, and two fuji apples have in common? They come together to make a damn fine apple pie bite. These babies only have 66 calories per bite.
They are perfect for a party or for snacking in front of the TV while you’re watching the latest episode of the Voice or the Blacklist. So pull up some counter space and get chopping.
These apple pie bites are the perfect solution to a craving for apple pie, and you don’t even have to buy (or eat) a whole apple pie. They can be assembled as you need them. You can make a whole week’s worth of guilt free desserts on one Saturday or Sunday afternoon.
This recipe looks like it has a lot of steps, but it’s actually really easy.
You can practice working with Fillo dough, and this is a great place to get your feet wet, because it only uses three sheets. It also doesn’t really matter if you accidentally rip the dough. You can also start over if you get into big trouble.
If you don’t want to work with Fillo dough from scratch, you can also buy pre-made cups that you can just pop into the oven.
The filling actually makes extra, so get creative and see how many recipes you can use it in! I may just eat mine by the spoonful, it’s that good.
Apple Pie Bites
1 Granny Smith Apple
2 Fuji Apples
2 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/4 teaspoon cloves
A dash of allspice
1/2 teaspoon vanilla
1/2 cup brown sugar
Mini filo cups
3 Sheets of thawed Fillo dough
Melted butter for brushing (2-4 tablespoons)
Mini cupcake tin
1. Peel the skin off the apples. If you don’t have an apple peeler, use a knife and carefully cut the skin off the apple, starting at the top and twisting the apple until you get to the bottom. This does not have to be perfect.
2. Remove the cores, and dice the apples into bite-sized pieces.
3. In a medium to large sized sauce pan, add the apples, butter, flour, salt, cinnamon, cloves, all spice, vanilla, and brown sugar, and mix well.
4. Cook on medium high heat for 10 minutes or until the apples are cooked. They will be soft and tender to the touch.
5. Set aside and allow to cool.
6. Carefully unroll the Fillo dough and place one sheet on a flat surface, like a cutting board or a counter. Make sure that you can cut on the surface.
7. Brush a thin layer of melted butter on the dough, and place the second sheet on top. Repeat with the third sheet, but don’t brush the top layer with butter.
8. Working fairly quickly, take a pizza cutter and cut the dough into 24 squares (4 long lines across the length of the dough, 6 short lines along the width of the dough). Place a slightly damp paper towel over the dough to keep it moist.
9. Grease your mini cupcake tin with nonstick spray or butter. (If you have any butter left over from brushing the Fillo dough, this would be a great place to use it up.)
10. Carefully place each square into a single circle, pressing the dough down into the tin to make sure it’s touching the bottom of the tin.
11. Bake the Fillo dough at 350 degrees for about 10 to 15 minutes or until golden brown. Make sure to check your dough periodically to make sure it doesn’t burn.
12. Fill the cups with the apple mixture only as you need them. Placing the cups in the fridge when they are filled with the apple filling will cause the apple pie bites to get soggy and pretty gross.

Store the apple filling in the fridge and the Fillo cups in an air tight container. You can store them in a plastic bag, but remember they are fragile and can break easily.
