Pecan Strawberry Butter
Sometimes in the mornings, things can be a little rushed. When I’m short on time, it seems that it’s breakfast that suffers. Usually, I’ll just end up throwing a piece of bread in the toaster and eat it as I’m heading out the door. So, what better way to dress up a boring old piece of toast than with a tasty spread. This spread is a step up from regular old peanut butter. Not to mention, it’s super easy to make. Give this pecan strawberry butter a try and you may just think that toast can be a worthy breakfast.
Pecan Strawberry Butter
Ingredients:
1/2 cup strawberries
1 1/2 cups toasted pecans
1 tablespoon honey
1. Toast the pecans in a small to medium sized pan on medium-high for about 5 minutes (you’ll know they are done when you start to smell the pecans.)
2. Add the pecans to a small food processor and grind until the nuts become a smooth paste.
3. Add the honey and grind until well incorporated.
4. Add the strawberries and grind until well incorporated.
5. Remove from the mixer and store in a Tupperware in the fridge for up to two weeks.
