1 Medium Red Onion
¾ cup Vinegar (I used Apple Cider)
3 Tablespoons Sugar
1 Tablespoon salt
1 Tablespoon Pickling Spice
1 Dash red Pepper flakes
1 Dash Garlic powder
1 Dash Celery Seed
1.) Combine everything except the onion in a small pot. Place of medium-high heat. Bring to a boil, and then reduce to a simmer. Simmer for ten minutes to wake up the spices.
2.) Slice the onion fairly thin. Place the slices in a small jar.
3.) Let the brine cool for a little bit, and then pour it over the onion slices. Let refrigerate overnight, and they are good to go.
