Refreshing Fruit Salad
OK… so I really hate when people use the word “refreshing” to describe food. I don’t know why, it just sounds so corny. Maybe it’s because it’s overused. That being said, it seems refreshing is the only word to truly describe this fruit salad. The apples are so crisp. The mandarin oranges are so juicy and sweet. The pineapples are so tangy. And the raspberries. The raspberries are so tart. The addition of the juices and honey brings it all together for one kick ass fruit salad! The combination of these fruits seems a little strange, but the flavors work so well together, and it’s a little something different for your tired taste buds. If you have those, anyway.
You can eat a lot of this dish with out piling on the calories. I’m guessing it’s all the wonderful fiber from the fruit. I hope you enjoy!
Refreshing Fruit Salad
Ingredients:
1 cup raspberries
2 apples, diced
1 15 oz can mandarin oranges
1 20 oz can pineapple tidbits in 100% juice
1/4 cup pineapple juice, reserved
2 tablespoons mandarin orange syrup, reserved
2 tablespoons lemon juice
2 tablespoons honey
1. Add all the ingredients to a medium sized bowl, and mix well.
NOTE: The raspberries will dye everything purple, so if you don’t want that to happen, either leave them out, or make for a large group of people so the salad won’t be left to sit for a week.
