Rustic Raspberry Crumble

If you’re like us, you find yourself in need of the occasional quick dessert every now and then.  We really like crumbles because, well, they are quick, easy, tasty, and tend to be a little bit on the healthier side (at least as far as a dessert can be).  We are fortunate enough to have a really nice raspberry patch at our house, and we had a good harvest this year.  You could really substitute in just about any other berry, but why would you use an inferior berry?  Raspberries are the best berries, and not just because I say so.  This recipe can be thrown together while the oven is preheating, and it can be adjusted based on how many you need to prepare.  Dessert for one?  Easy.

Rustic Raspberry Crumble

Ingredients:

3 cups raspberries

4 tablespoons sugar

2 teaspoons vanilla

2 teaspoons corn starch

1/2 cup flour

1/3 cup oats

1/3 cup brown sugar

4 tablespoons butter

*Note: The raspberry mixture can be made in individual ramekins or in one large bowl, which ever you prefer.

1.  Combine the raspberries, sugar, vanilla, and corn starch in a bowl.  Divide the mixture equally into 4 ramekins.

2.  Combine flour, oats, and brown sugar in a separate bowl.  Layer evenly on top of the raspberry mixture.

3.  Cut a tablespoon of butter for each ramekin and place the pieces on top of the oat mixture.

4.  Bake at 350 for 10 – 15 minutes or until the raspberry mixture is bubbly.

5.  Let cool before eating.
