Spiced Apple Pancakes
Fall is in the air, literally the cool breezes and figuratively in the pumpkin everything that always invades the stores and pinterest this time of year. We might as well jump on the bandwagon (because we want to be part of the “in crowd”) too. Thus, I present Spiced Apple Pancakes.
To be honest, fall is my favorite time of year. No arm twisting needed hereto get me into the mood of the season. Since I can’t literally decorate my corner of cyberspace, I’ll figuratively decorate it with fall recipes.
This is a super easy recipe, and most likely, you already have everything you need. The apples may be the one wild card, and those are a pretty cheap item.
Let’s make some breakfast!
Spiced Apple Pancakes
Ingredients:
2 apples (I used green because that’s what I had in the fridge. The tart green apples balance the sweetness of the brown sugar.)
1/4 cup brown sugar
1 teaspoon apple pie spice (cinnamon, nutmeg, cloves)
Your favorite pancake mix
1. Dice the apples into bite-sized pieces and add them to a medium to large pan.
2. Add the brown sugar and the apple pie spice to the pan.
3. Mix up your pancake batter following the instructions on the box or bag.
4. Cook the apples until they are soft and semi-translucent, about 10 minutes (Or to your desired “done-ness”). I cooked these until they were almost overcooked. If you like yours with more bite, don’t cook them quite as long.
5. While the apples are cooking, cook your pancakes, but only if you can multi-task. Remember, the oven at 175-200 is your friend. It will keep your food warm as you finish cooking. Just remember to line your baking sheet with foil to keep the clean-up to a minimum.
