Summer Mojitos
This is the perfect sipping drink for the hot days of summer. Enjoy at a summer BBQ, or all by yourself. We keep a Mojito base in the fridge for an even quicker preparation. I love the refreshing flavors of this drink.
Just make sure to keep enough fresh mint around. If you’ve got enough space in your yard or on your deck, adding a mint plant in your garden or in a pot is a great way to go. This year, we planted a Mojito mint plant.
The mint and sugar combine nicely for a sweet flavor, while the lime juice and rum add the perfect acidity to balance it out. Add a lot of ice, and you’ve got the perfect drink to help you beat the summer heat.
Summer Mojitos
Ingredients:
2 oz White Rum
1 tablespoon Sugar
10 large Mint leaves
6 oz Seltzer Water
1/2 Lime or 1 oz lime juice
Glass full of Ice
Directions:
1.Add the mint leaves and sugar to a pint glass. Using a muddler, grind the mint and sugar into a rough past in the glass. If you don’t have a muddler, you can use the back of a wooden spoon.
2. Take the half lime and cut it into quarters. Add to the pint glass with the mint and sugar. Muddle the juice out.
3. Add two ounces of rum to the pint glass and muddled mixture and stir. Let sit in the glass for one minute.
4. Place a small strainer on a Collins glass, and pour the mixture into the glass through the strainer. Make sure to get all of the liquid out. Discard the mint and the lime rinds.
5. Add the seltzer water to the Collins glass with the mixture. Fill with ice and enjoy! Optional: garnish with mint and a lime wedge.
