Sun-dried Tomato Mayonnaise
Sometimes, a sandwich needs a little help. Sure, a simple sandwich is usually a thing of glory. But sometimes, you want to complicate things up a bit. You know what I mean…that sandwich that’s piled so high with almost every ingredient in the fridge! When you’re in the mood for THAT kind of sandwich, you want something special. Well this, my friends, is that something special. The flavor of a sun-dried tomato is so concentrated and powerful, and that’s why it lends itself so well to this kind of application. A flavored mayonnaise!
I know what you’re thinking: Mayonnaise isn’t really all that healthy. You’re right, but it’s fine in moderation. And, if it’s extra flavorful, you’ll need less of it. Which is perfect. (As always, we’ve listed the nutrition information at the bottom, so be sure to check that out.)
This five-ingredient recipe is so easy to throw together. It has big flavor to add a kick to any sandwich or salad you add it to. The best part is, all you have to do is dump and pulse! A spatula may or may not be involved. That’s up to you.
Sun-dried Tomato Mayonnaise
Ingredients:
1/4 Cup Sun-dried Tomatoes with oil
1 cup mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon pepper
Pinch of salt
1. Add all ingredients to a small food processor and pulse until well combined.
2. Store in a small container in the fridge for up to 2 weeks.
