Tomato Soup
There’s a cold in the air these days that only fall can bring. Yep folks, it’s officially sweater weather. The return of fall brings many tasty recipes meant to warm up your body and soul. Today, we have one of my absolute favorites for you: tomato soup! All you need to make this the perfect comfort meal is a grilled cheese. But for that, you’re on your own.
This is the old 4B’s tomato soup recipe (a restaurant in Montana that went out of business). I was actually pleasantly surprised to find out how healthy this is for tomato soup, but we did make one major swap. We substituted 2% milk for cream or half and half. That substantially reduced the calories, and really didn’t affect the creaminess much at all.

32 oz can of crushed tomatoes
9oz can tomato sauce
9oz chicken broth
2 tablespoon butter
1 tablespoon minced onion
a pinch of baking soda
2 cups 2% milk
119 Calories, 6.0g fat, 12.3g carbohydrates, 5.5g protein, 453 mg sodium
Add the onion and butter to a medium sized pot and saute.
Mix in the tomatoes, broth, sugar and soda, and let simmer for one hour.
Slowly heat milk in the microwave, one minute at a time, until warm. Then add while stirring.
Optional: add immersion blender to soup and blend until desired thickness is achieved.
