Vanilla Almond Nut Mix
The Halloween candy got to me. I couldn’t stop eating it, partly because there was a whole bag from Costco at my office, and I got hungry. I was missing something, and I realized what I needed to do. So I created a tasty snack that I could have in the afternoons when the hunger struck.
This is so easy to make and so tasty! You’ll never know there’s not sugar in it, except what’s been added to the fruit. Try to find fruit with no sugar added or less sugar added. Now I have a confession to make. I fully intended on buying apple chips. I picked up what I thought was a bag of apple chips, and threw it into the cart. When we got home, we discovered that we had in fact, bought freeze dried apples. Instead of going into full-on despair at our mistake purchase, we decided to give it a try and see what happened. The results were awesome! Once added to the mixture, the apples soaked up a bit of the liquid, and re-hydrated just a touch. What we got were slightly crunchy and slightly chewy apples, a fun addition to the crunch of the almond and chew of the cranberries.

Vanilla Almond Nut Mix
Ingredients:
2 tablespoons vanilla
1 egg white
3 cups almonds
1/2 cup cranberries
3 tablespoons honey
1/4 teaspoon salt
Black pepper to taste
1/2 teaspoon ginger
1 cup dried apples, apple chips, or freeze dried apples
1. Preheat the oven to 350. Whisk egg white and vanilla in a small bowl.
2. Add almonds and cranberries to a medium sized bowl.
3. Pour egg and vanilla mixture over almonds and cranberries, and stir until well coated.
4. Add the honey to the nut mixture and stir until well coated. This is a separate step because you don’t want the cold egg to cause the honey to seize up.
5. Add salt, pepper, and ginger and mix well.
6. Add the apples and mix well. We did this last because we didn’t want the freeze dried apples to soak up all the liquid.
7. Line a large cookie sheet with parchment paper, and add the nut mixture.
8. Bake at 350 for 15-20 minutes, rotate halfway through.
