Baked Shrimp Wontons

Tweet Baked Shrimp Wontons You will need: Wonton wrappers 1 can tiny shrimp 4 oz regular cream cheese 1 cup 0% fat Greek Yogurt 1 cup green onions 1 tablespoon Garlic Powder 1 teaspoon salt 1 teaspoon white pepper 1 teaspoon lemon pepper 1 teaspoon dried parsley Preheat oven to 400 degrees, and grease a cookie sheet. I like to use cooking spray. Just roughly, and I mean roughly, chop the shrimp. Add to the mixing bowl. Chop green onions and add to mixing bowl. Add the cream cheese, Greek yogurt, and spices, and mix well. Place a tiny dollop of the shrimp mixture on a wonton wrapper, about the size of a quarter. If you fill the wrapper too full, the filling will be forced out of the wontons, and you will have a cheesy-shrimpy mess. Ice Cream! A Frozen Tasty Treat!

Tweet Ice Cream!! Greetings again, internet friends! It’s ice cream time! For this week’s post, I thought I’d talk to you all about making your own ice cream. I thought of all the reasons you should make your own, but there’s only one that really makes sense. It isn’t more convenient than buying ice cream. It isn’t healthier than store bought ice cream. It isn’t cheaper than buying ice cream. What matters, however, is that it tastes better than store bought ice cream. We’re going to go over vanilla ice cream this week, but you can add cocoa to make chocolate, or throw in some mint extract and shaved chocolate to make a type of ice cream that I’ve never heard of. Croutons! Accessories for your Salad!

Tweet Homemade croutons are so easy to make and so damn good, I’m surprised more people don’t make them. Well, I imagine they don’t make them anyway. I guess I don’t know for sure. I haven’t taken a formal poll or survey. In fact, the thought of making homemade croutons never even occurred to me, until the restaurant I was working at a billion years ago ran out of croutons and the food order wasn’t expected until the next day. Not having croutons wasn’t an option; people need their croutons. So, one of the cooks, who is extremely talented in the kitchen, whipped up a batch to get us through the night. The wait staff couldn’t stop eating them. After that day, I thought that the restaurant should make their own croutons from scratch all the time. You’d be more apt to eat a salad, right? Pickled Onions

Tweet Pickled Onions Ingredients: 1 Medium Red Onion ¾ cup Vinegar (I used Apple Cider) 3 Tablespoons Sugar 1 Tablespoon salt 1 Tablespoon Pickling Spice 1 Dash red Pepper flakes 1 Dash Garlic powder 1 Dash Celery Seed 1.) Combine everything except the onion in a small pot. Place of medium-high heat. Bring to a boil, and then reduce to a simmer. Simmer for ten minutes to wake up the spices. 2.) Slice the onion fairly thin. Place the slices in a small jar. 3.) Let the brine cool for a little bit, and then pour it over the onion slices. Let refrigerate overnight, and they are good to go. Jeff’s Hamlet Hoagie

Tweet We took this beast of a sandwich to Shakespeare in the Parks production of Hamlet. Both the hoagie and the play were great. You could do several different things with this sandwich depending on what you have around. Here’s how I made it: Ingredients: 1 French baguette Mayonnaise Sliced roast chicken (I used about ¾ of a pound) Salami Provolone Cheese Roasted red peppers Sliced Tomato Pickled Onions Mixed Greens Olive oil Balsamic Vinegar We have a fairly decent picture guide this week, so keep up with that as well. 1.) Roasted Red Peppers

Tweet Roasted Red Peppers This is really more of a process than a recipe, but here’s how to make them. 1.) Get a grill super hot. 2.) Coat your peppers in oil, and place them on the grill. 3.) Char them. Char them good. You want the skin to be black and blistered. 4.) Remove the peppers from the grill. Place them in a bowl, and wrap the bowel tightly in saran wrap or aluminum foil. The goal here is to let the peppers steam the charred parts off. 5.) After a long rest, 15 minutes or so, remove the covering and peel the peppers. The skin should come off easily. Remove the seeds and you are good to go. Roasted red peppers are great to have around for sandwiches. You can use them for other things, too, like salads and pasta. Watermelon Salad

Tweet This is a super refreshing watermelon salad. It’s light, a little sweet, and just a little minty. Let’s start with the ingredients: For the dressing: ¾ cup Water ¾ cup Sugar Zest of two limes Juice of one lime Three large Sprigs of Mint (See picture) For the Salad 1 Small Watermelon (Or any desired amount, really) Mint Leaves (I used about 20) Fresh Ground Black Pepper So, let’s get started. The first thing you need to do is make your dressing. It will need to cool a bit before you can use it. Now, we’re going to be making extra dressing. Caprese Skewers –

Tweet These Caprese Skewers are a simple, easy, and elegant appetizer. Here’s what you need: Grape or Cherry Tomatoes Fresh Mozzarella (you can use the small balled ones, or cut up some cubes) Fresh Basil Leaves Extra Virgin Olive Oil Balsamic Vinegar Ground Pepper Toothpicks You’ll notice at this point that I didn’t list any amounts. That’s because you can make as few or as many as you like. Here’s how to combine them. 1.) Cut your tomatoes in half. They will absorb flavors better this way 2.) Place half a tomato on the toothpick. Top it with a piece of basil, then the mozzarella, then the other half of the tomato. 3.) Place in the container you wish to store them in. Once you have made your desired amount, drizzle your treats with the olive oil and balsamic vinegar. Add a little bit of fresh ground pepper. That’s all… Continue reading »

Grilled Sweet Potatoes

Tweet This is one of my favorite things to grill and eat! I LOVE grilled sweet potatoes, and they are so good for you! Here’s what you’ll need: Ingredients: 3 Medium sized Sweet Potatoes 2 Tablespoons Olive oil ¾ Teaspoon Seasoned Salt ½ Teaspoon Black pepper. ½ Teaspoon Cinnamon Pinch of Nutmeg 1.) About an hour or so before grilling, we need to par-cook the taters. Stab them with a bunch of holes, and put them in a microwave for about three minutes. Flip them over and cook them for another minute and a half. Let them cool for a few minutes. 2.) Once you can handle the potatoes, cut them into ½ - ¾ inch slices. Grilled Asparagus

Tweet Grilled Asparagus is a fun and great tasting side that’s super easy, with relatively no clean up afterwards. Ingredients 2 Pounds asparagus 2 Tablespoons olive oil 1 ¼ teaspoon Garlic Salt ½ teaspoon Black pepper 1.) Trim the woody ends off of the asparagus. After that, put them in a gallon Ziploc bag with all the other ingredients. Toss to coat. 2.) Turn on the grill, and take it to medium high. All that’s left now is grilling the asparagus. Make sure not to burn it. A pair of tongs is you friend here. Cook until the asparagus is tender, and the outside is just charred, about seven minutes.
