TweetTweet Lindsey’s Yogurt Blackberry Muffins: Preheat oven to 375 degrees Makes 24 regular muffins, or 12 large muffins. 3 cups whole wheat flour 1 cup turbinado sugar or sugar in the raw 1 tablespoon baking powder 1 teaspoon baking soda ½ teaspoon salt 3 cups 0% fat free yogurt ¼ cup honey 6 tablespoons butter 1 egg ½ tablespoon lemon juice (very important for the baking soda) 2 cups fresh or frozen blackberries (do not thaw if frozen)   1. Coat muffin tin (12 muffins) with nonstick spray. 2. Mix flour, sugar, baking soda, baking powder and salt together in a medium size bowl. 3. TweetTweet White Wine Chicken – Marinade You will need: 3 tablespoons of Garlic Paste 1/2 cup white wine 1 teaspoon herb chicken seasoning 1 teaspoon lemon pepper 1 tablespoon fresh chives, chopped 2 teaspoons salt 6oz chicken breast Tenderize the chicken with a mallet, or our favorite tool, Norpro Professional Meat Tenderizer. It pokes holes in the chicken, and allows the marinade to fully set into the chicken. To make the garlic paste, rub chopped garlic between a cutting board and the flat side of a knife, until it becomes like a paste. Place the chicken in a large gallon bag, and add all ingredients. Seal the bag, and rub chicken until it is completely covered in marinade. Let the chicken sit in the refrigerator in a bowl over night. This allows the marinade to completely cover the chicken. TweetTweet Healthy Blueberry Crisp You will need: 3 cups frozen blueberries, thawed 1 1/2 cups rolled oats 1/2 cup whole wheat flour 1 teaspoon apple pie spice (Penzy’s) Substitute: 1/2 teaspoon cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground cloves 1/8 teaspoon mace optional 3 tablespoons honey 2 tablespoons brown sugar 2 tablespoons butter Preheat oven to 350 degrees. Spray 8×9 pan with non-stick spray. In a medium-sized blow, mix blueberries and honey. The honey can make the blueberries stick together, so make sure they are fully thawed before mixing to help with this. Pour mixture into pan. In a separate medium-sized bowl, mix oats, flour, spices, and brown sugar. Cut in butter until crumbly. Pour dry mixture over blueberries. Bake in oven for 15-20 minutes or until golden brown.
